The Wine
The Pinot Noir of the Franz Haas winery is produced with 100% Pinot Noir grapes grown in vineyards owned by the winery. Located in South Tyrol and, more precisely, in the province of Bolzano. Franz Haas is a great Pinot Noir enthusiast, and his wine is the company’s flagship. The vines are located between 300 and 900 meters above sea level.
The Haas family has been running this winery for seven generations, and over the years, it has become one of the flags of South Tyrol.
THE WINEMAKING
After manual harvesting, the selected grapes are taken to the cellar for winemaking. The must ferments in open tanks; this technique allows the must to come into contact with the skins thanks to frequent pumping over and punching down. This technique enables the colouring substances and aromas contained in the peel to transfer to the wine. The wine then ages for at least twelve months in barrique, and after bottling, it rests for a few months in the bottle before being placed on the market.
THE TASTING
Ruby red. The aroma is elegant, with pleasant notes of red fruits where cherries and raspberries prevail, which leave room for hints of marzipan and plum jam to close with spicy scents of cloves and cinnamon. Fresh and lively on the palate with elegant and velvety tannins and a long, round and indeed persistent finish.
FOOD PAIRINGS
It goes well with red meats, game, and medium-hard cheeses but also with fish.
