THE WINE
The Pinot Noir from the Monviert winery comes from 100% Pinot Noir grapes grown near Cividale in Friuli Venezia Giulia.
Among all the vines in the world, Pinot Noir stands out as the most noble and, at the same time, the most complex to interpret. Originally from the Burgundy region of France, this vine is the basis of the most renowned and prestigious wines in the area. Pinot Noir is the progenitor of the Pinot family, from which, through genetic mutations, varieties such as Pinot Blanc, Pinot Grigio, Pinot Meunier, and numerous other biotypes derive.
THE WINEMAKING
The harvest is strictly manual. Once in the cellar, after delicately destemming the grapes, we proceed with maceration for a period of between 4 and 6 days to guarantee optimal extraction of the colouring, tannic and aromatic components from the grape skins. Once fermentation is complete, the wine refines in stainless steel tanks for 3-4 months. Subsequently, after blending and bottling, the wine rests in the cellar for a few months before being introduced onto the market.
THE TASTING
The red wine has a not-too-intense ruby colour. The aroma is delicately fruity; this Pinot Noir from Monviert is complex and enriches over time. Velvety on the palate, it is a beautifully rounded and never-aggressive wine, with a persistent aftertaste.
FOOD PAIRINGS
It goes well with both white and red meat and fresh cheeses. Try it with roast veal.
