THE WINE
The Pinot Noir “Rocca del Falco” from the DiAdema winery is 100% Pinot Noir grapes grown in vineyards owned by the winery. We are on the hills of the municipality of Prepotto in Friuli Venezia Giulia and, more precisely, in Brischis, a hilly area 350 meters above sea level.
The wine takes the name “Roccia del Falco” from the vineyard from which it is produced.
THE WINEMAKING
The harvest is strictly manual, and only the selected bunches are placed in crates and taken to the cellar for winemaking. The grapes macerate at a controlled temperature of 24° C with pumping over. Fermentation occurs in steel; part of the wine ages in steel and part in French oak barriques for a short period that varies depending on the year of production. After assembly and bottling, the wine rests for a few more months in the cellar before being released onto the market.
THE TASTING
Ruby red with slight garnet nuances; the aroma is pleasantly fruity, with notes of raspberry alternating with hints of cherry. Fresh and elegant on the palate, with a harmonious taste and a present but well-integrated tannin. The finish is long and persistent.
FOOD PAIRINGS
Excellent with red meat, game, and hard cheeses.
