THE WINE
The Pinot Noir Mezzacorona of the Castel Firmian winery is produced with 100% Pinot Noir grapes grown on the hills of Faedo and Pressano di Lavis, in the province of Trento.
THE WINEMAKING
The harvest of the grapes is strictly manual and only the selected ones are taken to the cellar for winemaking which begins with the maceration in contact with the skins which lasts 4-5 days. Fermentation takes place in steel at a controlled temperature of 25 ° C. The wine then ages in oak barrels for a period ranging from 6 to 8 months. Follows bottling; the wine then rests for a few months in the cellar before being placed on the market.
THE TASTING
Ruby red with garnet reflections. The aroma is elegant with notes of ripe red fruit alternating with hints of violet. Well balanced and fresh on the palate; the tannins are delicate and the persistence is excellent.
FOOD PAIRINGS
It goes well with both white and red meat but also with medium-hard cheeses.
