THE WINE
The Pinot Noir Collection 2021 from the Olivier Chanzy winery is perfect for those who still need to learn but want to get closer to the Pinot Noirs of Burgundy. We are talking about a small producer who, a few years ago, decided to buy some vineyards in the most famous region in the world for Pinot Noir, vineyards where the vines were a total disaster. With a lot of intelligence, patience and effort, he returned to their splendour and produced wines of the highest quality.
THE WINEMAKING
The grapes are manually harvested; only selected grapes go to the cellar for winemaking. After soft pressing, the wine ferments in steel at controlled temperature. The ageing on the lees takes place in oak barrels, and the wine rests for about 12 months. After blending and bottling, the wine rests in the cellar for a few more months before being placed on the market.
THE TASTING
Intense ruby red with garnet reflections; the aroma is elegant with pleasant hints of small red fruits that alternate with notes of blackberries. Finishing with spicy puffs. Soft and round on the palate, the tannins are velvety and elegant; the aromas and flavour correspondence are impeccable. Long and persistent finish.
FOOD PAIRINGS
It goes well with red meats, medium-hard cheeses and cold cuts.
THE WINERY
The history of the Chateau de Laborde winery dates back to 1704; at the time, the castle had almost 4 hectares of vineyards. In 1785 the castle was bought by a former banker named Jean-Joseph de Laborde, who thus became Marquis de Laborde.
