THE WINE
The Povolare of the Ca’Duso winery is 100% Tai Rosso grapes grown in the vineyards owned by the winery and located in the municipality of Costabissara in the province of Vicenza. We are in a hilly area about 220 meters above sea level. Povolare was the name of the old dirt road that went up from Costabissara towards Ignago di Isola Vicentina and crossed the current portion of the Tai Rosso vineyard; this is why the wine took this name.
THE WINEMAKING
The harvest is strictly manual and occurs in the early morning hours when the temperatures are still cool. The grapes are collected in small crates and immediately taken to the cellar for winemaking. The bunches are pressed and left to macerate for three days at a cold temperature of about 8°C. The fermentation takes place in stainless steel tanks, while the refinement happens in second passage French oak barriques, where the wine rests for at least twelve months. After assembly and bottling, the wine rests for a few more months in the cellar before being released onto the market.
THE TASTING
Intense ruby red; the aroma is elegant with pleasant hints of berries that alternate with floral notes such as red rose, to continue with hints of candied citrus peel and puffs of lavender to close with spicy sensations of cinnamon. Enveloping on the palate with silky tannins and an excellent acidity that encourages drinking. Long and persistent finish.
FOOD PAIRINGS
Perfect with red meats and medium-hard cheeses, it does not disdain blue fish. Try it with cod.
