THE WINE
The Primitivo di Manduria Monte dei Cocci from the Tenute Girolamo winery is produced with 100% Primitivo grapes grown in the vineyards owned by the winery that are located in Manduria; a characteristic area also thanks to the color of the soil which is red.
THE WINEMAKING
After manual harvesting, only the selected grapes are brought to the cellar for winemaking which begins with a quick maceration and soft squeezing. Fermentation takes place in French oak vats. The wine is then moved to French oak barrels where it ages for a period ranging from 4 to 6 months. After assembly and bottling, the wine rests for a further 6 months in the cellar before being placed on the market.
THE TASTING
Ruby red with violet reflections. The aroma is very pleasant with fruity notes of orange peel, plum and currants that alternate with spicy tones of red pepper and cinnamon. Harmonious and velvety on the palate; a well balanced wine with a long persistence and a pleasant balsamic aftertaste.
FOOD PAIRINGS
It goes well with red meats and hard cheeses but also with cold cuts. Must try with the typical dishes of the Apulian culture.
