The Prosecco di Valdobbiadene Superiore BRT
The Prosecco di Valdobbiadene Superiore DOCG brut BRT from the Duca di Dole winery is produced with Glera (85%), Verdiso (10%) and Perera (5%) grapes grown in the vineyards owned by the winery that are located inside the Tenuta di Rolle in the heart of Valdobbiadene.
The Winemaking
The grapes are harvested by hand and immediately transported to the cellar on refrigerated vehicles at controlled temperature (8-10 ° C). Once in the cellar the grapes are destemmed and softly pressed; the fermentation takes place at controlled temperature. The wine is then moved to the autoclave (martinotti method) for the second fermentation (making the sparkling). The cellar believes in the purity of the wine and limits the addition of sugars and any intervention that alters the original product.
Tasting the Duca di Dole wine
Intense straw yellow with greenish reflections; the aroma is of medium intensity, with fruity notes of ripe fruit, apple and Williams pear that leave room for light floral notes of acacia and wisteria to close with hints of bread crust. Dry on the palate with good structure and flavour. Medium persistence with a pleasantly salty finish.
Food Paring
Pleasant as an aperitif, it goes well with fish but also with pasta with rich sauces.
