The Prosecco Superiore DOCG Rive di Rolle XBRT
The Extra Brut DOCG Prosecco Superiore XBRT from the Duca di Dole winery comes from 100% Glera grapes sourced from the historic Prosecco wine region, located in the heart of Veneto, Italy; the vineyards, over 50 years old, are situated in Rive di Rolle, an area characterized by a unique microclimate and mineral-rich soils. The designation “Extra Brut” indicates a very low level of residual sugar giving the wine distinctive freshness and dryness.
The Winemaking
The winemaking of Rive di Rolle Duca di Dole occurs through the Charmat method, also known as the Martinotti method. After harvesting, the grapes are pressed to obtain the must, which ferments in temperature-controlled stainless steel tanks. The second fermentation, which produces the bubbles, takes place in autoclaves; this process allows the fresh and fruity aromas of the grapes making the wine particularly lively and aromatic. Maturation takes place for a period ranging from 6 to 9 months before bottling.

On the palate, it is dry, with a lively acidity that provides freshness and a pleasant effervescence. The finish is long and clean, with a note of almond and an aromatic persistence that invites another sip.
