THE WINE
The Recioto of the Santa Sofia winery is a selection of Corvina and Corvinone grapes for 70% and Rondinella for the remaining 30%, grown in the vineyards owned by the winery. We are in the highest hills of the “Valpolicella Classica” where the soils are of calcareous origin.
This Recionto is an intriguing wine that gets better with age. Perfect for your evenings in front of the fireplace.
THE WINEMAKING
After manual harvesting, the selected grapes go to the cellar where they are destemmed and softly pressed; the winemaking begins with a temperature-controlled maceration; this step allows to preserve the freshness and aroma of the grapes. The fermentation is constantly monitored and is stopped at the right time, to ensure that the wine has the desired sugar concentration. The wine ages 18 months in 500-litre French oak tonneaux, followed by six months in 30hl Slavonian oak barrels. After assembly and bottling, the wine rests for another six months in the cellar before being released onto the market.
THE TASTING
Intense and brilliant ruby red with a light purple hue. The aroma is pleasantly balsamic with floral notes that alternate with hints of small red fruits that intertwine with spicy sents of tobacco and toasted dried fruit close. Well structured on the palate with a pleasant freshness and a great acidic note, this Recioto is sweet but never cloying with a lively tannic texture, which closes with a clean and persistent finish.
FOOD PAIRINGS
Excellent with coffee-based desserts, shortcrust pastry, and chocolate cakes; worth a try with hard cheeses, especially Roquefort.
