The wine Mirnik Rosso by Ferruccio Sgubin
THE WINEMAKING
The harvest is manual and occurs when the grapes are perfectly ripe, particularly when the skin and tannins reach ideal ripeness. Once the grapes arrive at the cellar, the winemaking begins with twenty maceration on the skins. The must ferments at a controlled temperature of 26°C in stainless steel tanks. The wine then ages for twenty-four months in oak barrels. After blending and bottling, the wine rests for at least six more months in the cellar before being released to the market.
Tasting the wine by Ferruccio Sgubin winery
he wine is an intense ruby-red colour. The aroma immediately reveals red fruit, with cherry being the dominant note, along with hints of jam and a backdrop of sweet spices with undertones of vanilla and cocoa powder. On the palate, it is soft and fresh, featuring well-polished tannins. The flavours are intense, with an excellent correspondence between the aromas and the taste. The finish is long and pleasantly persistent.
FOOD PAIRINGS
It pairs well with red meats, game, and aged cheeses. For a great combination, try it with stewed meat.
