THE WINE
The Ribolla Gialla from the Damijan Podversic winery is a very special wine that perfectly represents the grape which is made with. After a sip you really have the feeling of being among the rows in the vineyard to taste the Ribolla Gialla grapes.
THE WINEMAKING
After manual harvesting that takes place only when the grapes are fully ripe, the fermentation phase begins, on the skins for 60 to 90 days, in conical truncated oak vats using only indigenous yeasts. The wine is then left to age for about 36 months in large oak barrels (20 or 30 hl) and after bottling, it rests for an additional 12 months before being placed on the market.
THE TASTING
Deep gold yellow with very intense aromas where yellow fruit notes are mixed with mineral scents that give way to light puffs of aromatic herbs. Stylish and elegant on the palate, lively and lightly tannic. Very persistent. A must try!
FOOD PAIRINGS
It goes well with fish (also fried) and white meat. Must try with smoked salmon.

THE WINERY
We are in Gorizia, near the border with Slovenia; this is where Damijan Podversic created the winery of his dreams, just as he wanted it. Damijan, who at just 40 years of age already has a vast experience, has always wanted to recover and enhance old abandoned vineyards in the hills around Gorizia which have always been particularly suited to viticulture. Damijan began his journey by taking care of the family vineyards where he could work closely with Josko Gravner; the person who taught him everything and that Danijan considers his mentor… go to the winery page
