THE WINE
The Ribolla Gialla Sodevo of the Zuani winery is 100% Ribolla Gialla grapes grown in vineyards owned by the winery in the area of San Floriano del Collio province of Gorizia. We are in the heart of the DOC Collio.
Ribolla Gialla is probably the oldest native Friulian grape, it seems in fact that it dates back to the Roman Empire.
THE WINEMAKING
The harvest is strictly manual. Once in the cellar, the grapes macerate cold for twelve hours and are then, softly pressed. The winemaking takes place in steel at a controlled temperature. The wine ages in stainless steel tanks. and when it has reached the right maturation it is assembled, bottled, and left to rest for a few more months in the cellar before being released on the market.
THE TASTING
Brilliant straw yellow with light greenish reflections; the aroma is elegant with pleasant floral notes where jasmine and acacia flowers prevail. Fresh on the palate with a pleasant acidic note that invites you to drink and an excellent correspondence between the aromas and the flavor. Good persistence.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish, shellfish and, soft cheeses. Try it with cold cuts.
