THE WINE
The Sparkling Ribolla Gialla dosaggio zero of the Collavini winery, is a new company’s flagships. 100% yellow Ribolla, cultivated in Corno di Rosazzo and Manzano (Udine) with a yield per hectare of about 80 quintals.
THE WINEMAKING
The harvest takes place when the grapes are not yet fully ripe and the grapes are picked only in the morning after the breeze from the north-east has dried the thin veil of nocturnal humidity. The delicate pressing of the intact grapes is followed by the natural decantation of the flower must that lasts a whole night. The first fermentation, at 14 ° C, takes place partly in steel and partly in barriques. The following spring the Ribolla Gialla is refermented, very slowly, at 12 ° C, in large horizontal autoclaves; it follows the refining sur lies (on the yeasts) for a period never shorter than 30 lunar cycles. During this period, the re-fermentation continues very slowly until the sugar residue is brought below 3 g / l. After bottling, which is carried out in complete absence of oxidation, the wine rests for a further 12 months in bottle.
THE TASTING
Intense and bright straw yellow with light greenish reflections, the perlage is very fine and persistent. The aroma is fresh with pleasant citrus notes that intertwine well with fragrant hints of yeast to close with fruity scents of peach. Very fresh on the palate, with great flavor and perfect structure. Excellent correspondence between the aromas and taste with a very long finish.
FOOD PAIRINGS
Exceptional as an aperitif, it goes well with shellfish and fish dishes but also with cold cuts. Must try with finger food.
Note that for the 2015 vintage only 6000 bottles were produced and they are all numbered.

THE WINERY
The history of Collavini begins in Rivignano (Friuli Venezia Giulia), in 1896 with Eugenio, the founder, who was the wine supplier of the noble families of Udine and of the shops. The winery management passes from Eugenio to his son Giovanni, who has to drive the company through two wars but, at the end of which, thanks to the rapid acceleration of the commerce, succeeds in establishing the success of the winery thanks to the quality of its wines… go to the winery page
