The Cabernet Sauvignon wine by Forchir winery comes from 100% Cabernet Sauvignon grapes grown in the vineyards of the Forchir winery, located in the DOC Friuli area, which is well-suited for Friulian wine production.
Cabernet Sauvignon, a grape variety of Bordeaux origin, has been in Friuli for centuries. Thanks to the unique Friulian soil and climate, it produces a velvety and warm wine with a beautiful ruby red colour.
THE WINEMAKING
The Forchir winery conducts the grape harvest at night, allowing the grapes to arrive at the cellar during the coolest hours of the day. This practice ensures that the grapes can be processed at low temperatures, which is crucial for preserving their aromatic profile.
The harvest occurs in September, marking the end of summer. Selected grapes go to the cellar for winemaking, which begins with a maceration period on the skins lasting at least ten days, although the duration may vary based on the vintage. The must then ferments in stainless steel tanks at a controlled temperature.
The wine ages in steel tanks for a duration that varies depending on the vintage. Once the wine is ready, it is blended, bottled, and left to rest in the cellar for a few additional months before being released to the market.
Tasting the wine by Forchir
The wine is ruby red and has delightful fruity aromas of blackberry and plum. These initial fruity notes are complemented by hints of green pepper and finish with touches of black pepper. It is warm and well-structured on the palate, featuring refined, well-integrated tannins and a long, persistent finish. There is an excellent harmony between the aromas and the flavours.
FOOD PAIRINGS
Forchir Cabernet Sauvignon pairs wonderfully with red meats and mature cheeses. It is highly recommended with cured meats, especially when enjoyed with a mixed platter of Friulian cured meats.
