THE WINE
The ribolla gialla of the Gravner winery is produced with 100% ribolla giallo grapes grown on the Collio Goriziano in Friuli Venezia Giulia. It is an extraordinary wine that fully demonstrates the love that the winery owner Francesco – Josko Gravner has for his land.
THE WINEMAKING
After the strictly manual harvest, the winemaking takes place in Georgian amphorae, that are buried underground; here the must ferments with long maceration. Only indigenous yeasts are used and the temperature is not control. After racking and pressing, the must goes back in the amphora for other 5 months. The wine then ages in large oak barrels for at least 6 years.
THE TASTING
Veery bright orange-yellow. The aroma is crazy; fruity notes where peach and apricot prevail alternate with hints of aromatic herbs. Intense aromas of oregano, sage and rosemary leave room for hints of beeswax. Elegant and full bodied on the palate; perfect balance with barely perceptible tannins. Very long persistence. A wine of great class.
FOOD PAIRINGS
Perfect with white meats and fish, it can be used throughout the meal. Must try with mushrooms and truffles
