THE WINE
Here is the Ribolla Gialla from the Pie di Mont winery, obtained exclusively from Ribolla Gialla grapes grown in the same vineyard on the slopes of Mount Calvario in the renowned area of Oslavia, famous for the internationally renowned Ribolla Orange Wine.
In this context, a classic method, Ribolla, was produced to offer a fresh, elegant, and sparkling alternative. The vineyard, exposed to the Southeast, benefits from a wide temperature range, favouring a late harvest, producing wine with an intense aroma and balanced acidity. The soil is marly.
THE WINEMAKING
The harvest begins at the beginning of September and is carried out strictly by hand. The grapes are harvested in boxes only during the coolest hours of the day to guarantee the integrity and optimal temperature of the bunches. Once in the cellar, the grapes are wine made in steel tanks through gentle pressing. The refinement process involves a period of one year on the yeasts in the bottle.
THE TASTING
Of a bright and brilliant straw yellow colour, Ribolla Gialla exudes a fresh bouquet of white pulp fruit enriched with notes of apple, jasmine and violet. On the palate, it stands out for its dryness, freshness and liveliness, with a soft and, at the same time, distinctive elegance underlined by a minerality and flavour that reflect the terroir of its origin.
Even in the sparkling version, Ribolla Gialla maintains the unique characteristics of this native vine, a symbol of the Friuli-Venezia Giulia region.
FOOD PAIRINGS
Its fruity and persistent finish makes it ideal as an aperitif and goes beautifully with cold appetizers such as octopus or cuttlefish salad, cleansing the palate after fried fish. Excellent combinations are obtained with dishes such as spaghetti with bottarga and cod.
THE WINERY
The winery was founded in 1983 by Paolo Rizzi but at that time he did not produce wine but planted the vine cuttings by hand on the steep hills of this area of the Collio Friulano.
