THE WINE
The Ribolla Gialla RoncAlto from the Livon winery, an indigenous wine of Friuli Venezia Giulia, comes from 100% Ribolla Gialla grapes grown in the property’s vineyards. This Ribolla Gialla takes its name RoncAlto from the vineyard where its grapes grow.
We are in Ruttars in the Municipality of Dolegna del Collio near Gorizia in Friuli Venezia Giulia. Right in the heart of the DOC Collio, the soil rich in marl and clay (here they call it Ponca), the climate with its temperature ranges and the Alps that protect the territory make this area one of the most suitable for cultivation of grapes especially of white berried vines.
THE WINEMAKING
The grape harvest is rigorously manual; the grapes are placed in small boxes to minimize the time between the harvest and the arrival in the cellar. Winemaking begins with soft pressing and cold maceration, which lasts about eight hours. The must is then cleaned by decantation and decanted into steel tanks for the fermentation phase, which takes place at a constant temperature of 16 °C and lasts about eight months. The wine then ages in the same steel tanks for another eight months; after blending and bottling, the wine rests for a few more months in the bottle before being placed on the market.
THE TASTING
Straw yellow; the aroma is pleasant with notes of ripe fruit such as peach, leaving room for floral scents where white flowers prevail. Intense and enveloping on the palate, fresh with excellent sapidity and persistence.
FOOD PAIRINGS
It goes well with fish, white meat, and medium-hard cheeses. Try it with cuttlefish ink risotto.
