THE WINE
The sparkling Ribolla Gialla wine from the DiAdema winery is 100% Ribolla Gialla grapes grown in the vineyards owned by the winery. We are on the hills of the municipality of Prepotto in Friuli Venezia Giulia.
This wine is the firstborn of this young winery and is also the flagship of the company. The owner (Adema) has paid particular attention to creating the label.
THE WINEMAKING
The harvest takes place in the early hours of the day, to preserve the fragrance and primary aromas of the grapes. The selected bunches are taken to the cellar where the winemaking begins with a delicate pressing followed by a natural decantation of the free-run must for twenty-four hours. The fermentation takes place in steel at a controlled temperature of 14°C. In the spring following the harvest, the wine is moved to an autoclave for the second fermentation, where it rests “sur lies” for 180 days. After bottling, the wine rests for a few more months in the cellar before being released onto the market.
THE TASTING
Bright straw yellow with greenish reflections and a fine and persistent perlage. As far as the aroma is concerned, pleasant hints of green apple alternate with mineral notes. Fresh and well structured on the palate with a pleasant citrus aftertaste and a long and persistent finish.
