The wine from the Villa Job winery
The Risic Blanc from the Villa Job winery is a very particular wine; as the winery says, certain wines happen. Time and oxygen generate a phenomenon capable of dilating time and space. The oxidations make this wine unique and very personal. This wine is a blend of white grapes that grow in the vineyards owned by the winery, but we don’t know exactly which ones. The only thing that the oxidative part is made up of 9 vintages of Pinot Grigio.
THE WINEMAKING
Fermentation occurs in oak barrels that remain open for five days, with the sole use of indigenous yeasts. 80% of the wine ages in cement tanks and old oak barrels and lasts over six years. The oxidative part, which is 20% of the mass, comprises nine years of Pinot Grigio aged in half-filled barrels (solera method). After blending and bottling without filtration, the bottles rest for a few more months in the cellar before being placed on the market.
Tasting the Risic Blanc
Deep golden yellow, the aroma is exquisite with fruity notes of melon and pear, which alternate with hints of butter and caramel. The oxidized note of caramelized sugar and butter is perceived on the palate, persistent with a touch of sweetness on the finish.
