IL VINO
The Palmarès brut from the Tenuta Gorghi Tondi winery is produced with 100% Grillo grapes, grown in vineyards owned by the winery. We are near Mazara del Vallo in the westernmost part of Sicily, a stone’s throw from the sea and the sea breezes. The estate is located within a nature reserve protected by the WWF.
The winery is a family-run winery run by women, and since 2016 all vineyards have been certified organic, which means that all the wines are organic and carry the famous green leaf on the label. Both in the vineyard and in the cellar, there is the utmost respect for nature and its balance.
The name Palmarès is of Latin origin, meaning “worthy of victory”, and was chosen to indicate the excellence of this sparkling wine of Grillo grapes grown in a vineyard that combines the terroir of the WWF Nature Reserve with the iodine breezes of the sea. It is the perfect sparkling wine for important occasions.
THE WINEMAKING
After the grape harvest which takes place in the first ten days of August, only the selected grapes go to the cellar for winemaking, which begins with a soft pressing. The must ferments in steel tanks at a controlled temperature and is then, it is moved to the autoclave for the second fermentation. In the autoclave, the wine rests on the yeasts for a period between thirty and fifty days. After bottling, the sparkling wine rests for a few more months in the cellar before being released on the market.
THE TASTING
Straw yellow with a fairly fine and persistent perlage. The aroma is refined with pleasant fruity hints of apple, peach and apricots that leave room for notes of wildflowers. Fresh and pleasantly savoury on the palate, Palmarès Brut is a dry sparkling wine with a good correspondence between the aromas and flavour and a long and pleasantly almondy finish.
FOOD PAIRINGS
This sparkling wine pairs well with shellfish, fish and soft cheeses. Try it with sushi.
