THE WINE
The Champagne method sparkling Rosé extra brut of the Casa Caterina winery is produced with 100% Pinot Nero grapes grown in the vineyards owned by the winery in Monticelli Brusati in the heart of Franciacorta.
After harvesting, the selected grapes are taken to the cellar for winemaking. The first fermentation takes place in steel tanks with the sole use of indigenous yeasts. The second fermentation takes place in bottle (champagne method) and the wine rests on the lees for 60 months. We want to emphasize that for this wine there is no use of sulphites.
Salmon pink, the perlage is very fine and persistent with a very creamy froth. The aroma is very elegant with floral notes that alternate with hints of small red fruits. Pleasant hints of sweet spices follow, to close with a pleasant sensation of bread crust. Refined and creamy on the palate; well balanced with a good correspondence between aromas and flavor. The persistence is also excellent.
It goes very well with fish and white meats but also with light pasta dishes.
