THE WINE
Conero Riserva DOCG Cùmaro from the Umani Ronchi winery takes its name from the Greek Komaros, which means strawberry tree, an evergreen tree found in the woods of Monte Conero, right where the vineyards are located.
A wine whose grapes enhance the calcareous soil and the proximity to the sea. Thanks to its quality, in 2004 obtained the DOCG (Controlled Designation of Origin Conero Riserva).
THE WINEMAKING
The harvest is strictly manual and occurs in October when the grapes are fully ripe. The selected bunches are collected in crates. Once in the cellar, the grapes are destemmed and softly pressed. The must ferments at a controlled temperature of 27-29°C in steel tanks for about 12 days. The wine ages for about 12-14 months in large French oak barriques. After assembly and bottling, the Conero Riserva DOCG Cùmaro rests at least six months in the cellar before being released onto the market.
THE TASTING
Deep ruby red with garnet reflections. The aroma is intense with pleasant hints of black fruit such as plum, currant and berries that leave room for notes of morello cherry to continue with spicy puffs of black pepper and to close with scents of vanilla and tobacco. Soft and enveloping on the palate this Conero Riserva DOCG Cùmaro is a harmonious wine where the tannins are silky and well-smoothed and the finish is long and persistent.
FOOD PAIRINGS
It pairs well with red meat, game and hard and tasty cheeses. Try it with an excellent rare fillet steak.
