THE WINE
The Sauvignon of the Russiz Superiore winery is produced with 100% Sauvignon grapes grown in Capriva del Friuli, on the hills of the DOC Collio at an altitude above sea level that varies between 80 and 200 meters where the soil is rich in marl and sandstone.
THE WINEMAKING
After manual harvesting, once in the cellar, the selected grapes are separated from the stalk and cold macerated; a light pressing follows which allows separation from the skins. The must then ferments for 85% in steel tanks and for the remaining 15% in oak barrels. The wine ages for 8 months on the lees before being assembled and bottled.
THE TASTING
Straw yellow. The aroma is elegant with reminiscent of exotic fruit, notes of pepper and tomato leaf that intertwine with hints of acacia and grapefruit flowers. Soft and fresh on the palate with a perfect structure. Well balanced with a long and intense finish.
FOOD PAIRINGS
It goes well with fish and first courses with light sauces. Must try with the classic Italian dish spaghetti with tomato sauce.
