The wine Dolcetto by Alberto Rizzo winery
The SA’DUZET from the Alberto Rizzo winery is made from Dolcetto d’Alba grapes grown in the vineyards owned by the winery. We are on the Langhe hills which today are a UNESCO heritage site. The vineyards are on the hills of Mango and Diano D’Alba at 400 meters above sea level; here the soil is clayey and calcareous.
Alberto is a young wine producer who has just started his dream but who has a long winemaking tradition behind him; it was his grandfather Duilio Fedelem, who passed on his passion for wine.
The name is SA’DUZET and comes from the Piedmontese dialect and translates as “Tastes like dolcetto”.
THE WINEMAKING
The grapes are manually harvested. Once in the cellar, the winemaking begins with a spontaneous fermentation lasting 10-12 days with daily pumping over and a dèlestage halfway through fermentation. Dèlestage is a technique studied in France that favors the extraction and diffusion of color. The wine ages in steel tanks for a period that varies depending on the vintage. After blending and bottling, the wine rests for a few more months in the cellar before being placed on the market.
Tasting the Dolcetto by Alberto Rizzo
Ruby red with violet reflections. The aroma is delicate and pleasantly vinous with hints of red fruit where berries, cherries and plums prevail. Light on the palate with fine and well-smoothed tannins. The finish is soft and velvety with an excellent correspondence between aromas and flavour.
FOOD PAIRINGS
It goes perfectly with both white and red meat. It’s perfect with boiled meat. If served cool (12°C) it is also excellent as an aperitif with fresh cured meats and cheeses.
