THE WINE
Oriolo is a Sangiovese that fully represents the essence of this wine. Produced with 100% Sangiovese grapes, it takes its name from the area where the vineyards are planted. We are in a flat area in Castiglione di Forlì in Emilia Romagna; the soil is sandy here; the winery made a particular choice and decided to switch to organic cultivation. The trial began in 2018.
THE WINEMAKING
The harvest is strictly manual and late; it occurs in the third ten days of September. The winemaking begins with an immediate soft pressing of the grapes, the must macerate for about twenty-five days, and the fermentation at a controlled temperature takes place in steel tanks. The wine then ages for at least nine months in steel tanks. At the end of the refinement, the wine is assembled, bottled and left to rest in the cellar for at least six months before placing it on the market.
THE TASTING
Intense ruby red with violet reflections; the aroma is fresh and fruity, with pleasant hints of violets that leave room for notes of red fruit such as cherry, raspberry and blackberry to close with citrus scents. Fresh on the palate, this Sangiovese is an easy-drinking wine with mineral hints and lively, well-smooth tannins. The persistence is also excellent.
FOOD PAIRINGS
It goes well with red meat but also with pasta with both meat sauces and vegetable sauces. Try it with cold cuts.
