The Sauvignon from the Castello di Spessa winery
The Sauvignon from the Castello di Spessa winery is 100% Sauvignon grapes grown in the vineyards owned by the winery, located in Cormons, an IGT not far from the border with Slovenia, where the soil is mainly clay and sand with the presence of gravel.
THE WINEMAKING
After the harvest in the first ten days of September, the grapes are taken to the cellar for winemaking. After a soft pressing of the grapes, the fermentation occurs in steel tanks at a controlled temperature that varies from 14 to 16°C. The wine ages in steel tanks until the March following the harvest. After assembly and bottling; the wine rests for a few more months in the cellar before being released on the market.
Tasting the wine of the winery
Straw yellow with greenish reflections; the aroma is fine and elegant with fruity hints where apricot prevails intertwining with notes of tropical fruits to close with hints of tomato leaf. Fresh on the palate with a pleasant acidic note and a good correspondence between aromas and flavor. Good persistence.

This Sauvignon is perfect with fish and shellfish. We recommend trying it with fish soup.
