THE WINE
The Sauvignon of the Colle Duga winery comes from 100% Sauvignon grapes grown in the vineyards owned by the winery. We are in the localities of Zegla in the municipality of Cormons in the heart of the Collio DOC area in Friuli Venezia Giulia. The microclimate and proximity to the sea make this area one of Friuli’s most suitable for growing vines. This part of the Friuli Venezia Giulia region is also famous for what the locals call “ponca”, or the soil rich in sandstone marl of Eocene origin.
THE WINEMAKING
The harvest is strictly manual and takes place around mid-September; the selected grapes are brought to the cellar for winemaking. After soft pressing, the must obtained is coldly decanted. Both fermentation and refinement of the wine take place in steel tanks. After refinement, the wine is assembled, bottled and left to rest for a few months in the cellar before being placed on the market.
THE TASTING
Golden yellow, the aroma is delicate and complex, with pleasant notes of tropical fruit that leave room for hints of elderflower and citrus fruits to finish with pleasant puffs of sage and tomato leaves. Soft and well structured on the palate. Excellent correspondence between aromas and flavour. This Sauvignon from the Colle Duga winery is a wine of character with a long and persistent finish.
FOOD PAIRINGS
It is excellent with fish, vegetables, and omelettes, but we recommend it with beef tartare.
