THE WINE
The Sauvignon, Lame del Sorbo, from the Agricolavinica winery, is produced with 100% Sauvignon grapes grown in the vineyards owned by the winery and located in the area called Lame di Sorbo from which the label takes its name; this area is about 600 meters above sea level. Here, the exposure and temperature ranges give this wine great freshness and acidity.
THE WINEMAKING
The grape harvest is strictly manual in the first ten days of September. Once in the cellar, after soft pressing, the must ferments spontaneously, in steel tanks with the sole use of indigenous yeasts. The wine then ages in steel in contact with the lees for about 12 months; after bottling, it rests in the cellar before being placed on the market.
THE TASTING
Intense and lively straw yellow. Mineral notes intertwine with pleasant hints of exotic fruit and scents of acacia flowers. Full bodied and warm on the palate, with good acidity and a long, saline finish. The correspondence between aromas and flavor is also excellent.
FOOD PAIRINGS
It goes well with white meats and medium-hard cheeses. Try it with vegetable soups and fish appetizers.
