THE WINE
The Sauvignon of the Lis Neris winery comes from Sauvignon grapes grown in the owned vineyards located between the municipalities of San Lorenzo, Corona and Romans in the province of Gorizia; we are on a plateau where the soil is mainly gravelly and calcareous, and these vines, in particular, have an average age of fifteen years. It is also essential to know that the Lis Neris winery raises its vineyards following integrated pest management protocol without using chemical herbicides.
THE WINEMAKING
The harvest is strictly manual and only occurs when the grapes are perfectly ripe. The harvested grapes are carefully selected, and only the best bunches are taken to the cellar for winemaking. Fermentation takes place in stainless steel tanks; the wine then matures in the same steel tanks, on the lees for about eight months with frequent bâtonnage. After bottling, the wine rests in the cellar for a few more months before being placed on the market.
THE TASTING
Straw yellow with greenish reflections. The aroma expresses all the typical scents of this grape variety, from notes of elderberry to hints of tomato leaf to close with nettle and lime. Fresh and soft on the palate with good persistence.
FOOD PAIRINGS
It goes well with fish and white meats but also with soft cheeses. Try it with sushi.
