The wine Ribolla Gialla by Ferruccio Sgubin
The Ribolla Gialla from the Ferruccio Sgobin winery is produced from Ribolla Gialla grapes grown exclusively in the estate vineyards located in the Mernico area of Dolegna del Collio, in the province of Cormons, in the heart of the DOC Collio region in Friuli Venezia Giulia. Situated 150 meters above sea level, the vineyard features soil rich in marl and sandstone, locally known as Ponca. The winery has been certified organic (BIO) since 2023, and it has practised sustainable cultivation in previous years, with a particular focus on the protection of bees.
THE WINEMAKING
The harvest is conducted entirely by hand when the grapes achieve the ideal balance of sugars and acidity. Once the grapes are in the cellar, the winemaking begins with skin maceration, followed by gentle pressing. The must ferments at a controlled temperature of 16°C in stainless steel tanks. The wine is then aged in steel “sur lies” until spring following the harvest. After blending and bottling, it rests in the cellar for a few additional months before being released to the market.

It is fresh and well-structured on the palate, showcasing a strong correspondence between the aromas and flavours. The finish is long and pleasantly persistent.
FOOD PAIRINGS
This Ribolla Gialla is ideal as an aperitif and pairs well with white meats and fish. Consider trying it with seafood pasta.
