THE WINE
The Cabernet Sauvignon Gratus of the Ritterhof winery is produced with 100% Cabernet Sauvignon grapes grown in the vineyards owned by the winery. The vineyards are located between the sun-drenched lowlands of Bassa Atesina and the hills around Montagna. The soils rich in clay and sand offer the optimal conditions for the ripening of the grapes; the vines are over 35 years of age. We are located between 220 and 380 meters above sea level.
THE WINEMAKING
The harvest takes place in mid-October, when the grapes have reached optimal ripeness. The bunches are selected manually, and only the best are brought to the cellar for winemaking. Once in the cellar, the grapes are pressed, de-stemmed and fermented for 12 days in special containers at a controlled temperature of 28 ° C. During fermentation, the must is constantly kept in contact with the grape skins to enhance the fruity aroma of the wine. After fermentation, the wine ages in small French oak barrels.
THE TASTING
Intense ruby red. The aroma is elegant, with pleasant fruity notes of blackcurrant and blackberries that alternate with spicy hints of green pepper. Full and soft on the palate with tannins present but well-integrated and smooth. Complex and persistent.

Perfect with red meat and game but also with hard cheeses.
