THE WINE
The Sauvignon wine of the Jerman winery comes from 100% Sauvignon grapes grown in the vineyards owned by the winery. We are in Dolegna del Collio in the province of Gorizia. Here the land is called “ponca”; it is a rocky substrate composed of stratified marl and sandstone.
The Jerman winery was the first in Friuli to use the Stelvin screw cap model of the French company Pechiney: the winery chose this very technical closure to keep the fragrance and organoleptic qualities of the wine intact.
THE WINEMAKING
The harvest is strictly manual and occurs in the first days of September, and only the selected grapes are taken to the cellar for winemaking. After the soft pressing, the wine ferments in steel tanks at a controlled temperature. The ageing on the lees also occurs in the same steel tanks and lasts about six months. After blending and bottling, the wine rests in the cellar for a few more months before being placed on the market.
THE TASTING
Intense straw yellow, the aroma is elegant, with pleasant notes of passion fruit that alternate with hints of tomato leaf and fresh mint that leave room for intense puffs of elderflower. Dry and elegant on the palate, this Sauvignon from the Jerman winery is elegant and fresh with a lovely savoury note and a long finish reminiscent of balsamic flavours. The persistence is also excellent.
