THE WINE
The Sauvignon Picol from the Lis Neris winery is part of the most prestigious line of the winery; it comes from Sauvignon grapes grown in the vineyards owned by the winery, located in the municipality of San Lorenzo Isontino in the province of Gorizia; we are on a plateau sixty meters above sea level where the soil is mainly gravelly and calcareous, and these vines, in particular, have an average age of over thirty years. It is also essential to know that the Lis Neris winery raises its vineyards following integrated pest management protocol without using chemical herbicides.
THE WINEMAKING
The harvest is strictly manual and only occurs when the grapes are perfectly ripe. The harvested grapes are carefully selected, and only the best bunches are taken to the cellar for winemaking. Fermentation occurs in stainless steel tanks; the wine then matures for a part in the same steel tanks and the remaining part in oak barrels on the lees for about eleven months with frequent bâtonnage. After assembling and bottling, the wine rests in the cellar for twelve more months before being placed on the market.
THE TASTING
Straw yellow with golden reflections. The aroma is pleasantly intense with hints of elderflower, which leave room for citrus notes, such as cedar, to close with hints of kiwi and passion fruit. Fresh and balanced on the palate, with good sapidity and a good correspondence between aromas and flavours. The persistence is also excellent.
FOOD PAIRINGS
It goes well with fish and with soft cheeses. Try it with tuna tartare.
