The Wine
The Sauvignon Sottomonte from the Ronco del Gelso winery is produced with 100% Sauvignon grapes grown in the company vineyards in Cormons at the foot of the hills, which is why it is called Sottomonte (under the hills). The climate of this part of Friuli, the proximity of the sea and the soil rich in gravel are ideal for this grape variety. This Sauvignon is an elegant and balanced wine, perfect for all occasions.
THE WINEMAKING
After the strictly manual harvest, the selected grapes are taken to the cellar for winemaking, beginning with a cold maceration of the grapes lasting from twelve to eighteen hours. The grapes are softly pressed and left to ferment in steel tanks with the selected yeasts at a controlled temperature of 19°C. The wine transfers into large 25 hl oak barrels, of second passage, where it ages for about a year. After assembly and bottling, it rests for a few more months in the cellar before being released onto the market.
THE TASTING
Straw yellow with bright, almost golden reflections. The aroma is pleasant with hints of ripe, gall-paste fruit that alternate with citrus notes, grapefruit prevailing, and ends with hints of aromatic herbs. Soft and fresh on the palate, Sauvignon di Ronco del Gelso is well structured with an almost perfect correspondence between aromas and taste. The persistence is also excellent.
FOOD PAIRINGS
Excellent with white meats and soft cheeses like mozzarella and fish. Try it with roast chicken.
