THE WINE
The Sauvignon from the Ronco delle Betulle winery is produced with 100% Sauvignon grapes grown in the vineyards owned by the winery located in the Rosazzo area in Friuli Venezia Giulia.
THE WINEMAKING
The harvest is strictly manual, and once in the cellar, the grapes are de-stemmed, cooled and left to macerate at a controlled temperature for a short period; after a soft pressing, the wine ages for 5/6 months in steel. Bottling without filtration occurs between March and April following the harvest; then, the wine rests for another 5/6 months in the cellar before being placed on the market.
THE TASTING
Straw yellow with greenish reflections. The aroma is intense and elegant, with floral scents that intertwine with fruity and citrus notes to close with slight mineral hints. Soft but dry on the palate, complex and well structured with good persistence.
FOOD PAIRINGS
Suitable as an aperitif, it goes well with fish, white meats, soups and vegetables. A must try with cold cuts.
