THE WINE
The Sauvignon is the flagship of the Sturm winery; the wine that made Sturm famous worldwide. It is produced with 100% Sauvignon grapes grown in the municipality of Cormons in the province of Gorizia, on a plateau where the soli is mainly gravelly and calcareous.
THE WINEMAKING
The harvest is strictly manual and takes place between the end of August and the beginning of September. Once in the cellar, the selected grapes are destemmed and cold macerated for 24 hours. The must then ferments in steel tanks at a controlled temperature of 16-18 ° C. The wine then ages on the lees for 6 months. Bottling follows.
THE TASTING
Golden yellow. The aroma is fine with pleasant notes of tropical fruit that leave room for hints of elderberry and citrus fruits to close with elegant puffs of sage and tomato leaves. Soft and well structured on the palate. Excellent correspondence between perfumes and flavor. A wine of character with a long and persistent finish.
FOOD PAIRINGS
It goes well with fish, shellfish, pasta dishes with light tomato-based sauces and omelettes. Must try with the sea bass cooked in salt.
