THE WINE
The Sauvignon from the Zof farm comes from 100% Sauvignon grapes from the vineyards owned by the winery. We are in Corno di Rosazzo in the Colli Orientali del Friuli, a small area with a great wine tradition known worldwide. In Corno di Rosazzo, the climate, exposure, and the soil are fundamental factors for excellent wine production.
A family-run business for four generations with fifteen hectares of vineyards equally divided between white wines and red wines with native and non-native grapes. Zof has also boasted the collaboration of Donato Lanati for over ten years, the oenologist-scientist known throughout the wine world for his qualities and philosophy.
THE WINEMAKING
The harvest takes place at the beginning of September. Once in the cellar, the grapes are destemmed; a part is placed in steel at a temperature of 5°C for 12 hours while the remainder is immediately softly pressed and left to ferment in steel tanks. Both winemaking and refinement take place in steel. The April following the harvest, the wine is assembled, bottled, and, left to rest for a few months in the cellar before being placed on the market.
THE TASTING
Bright straw yellow with greenish reflections; the aroma is intense and delicate with pleasant hints of ripe fruit, banana, and melon leaveing room for notes of green pepper to finish with puffs of exotic fruit and sage. Zof Sauvignon is lively and full-bodied on the palate, with a pleasant savory note and a good correspondence between aromas and flavors. Persistence is also good.

Perfect for your aperitifs, it goes well with fish, cold cuts, and vegetable soups. Try it with egg-based dishes.
