THE WINE
The Schioppettino from the Monviert winery comes from 100% Schioppettino grapes grown near Cividale in Friuli Venezia Giulia.
The native vine, Ribolla Nera or Schioppettino, originated in Prepotto and is still mainly cultivated in this area. There are two theories as to why Ribolla Nera was called “Schioppettino”: one is related to the fizzy sound the wine made in the bottle, as it was bottled young and completed malolactic fermentation in the bottle, becoming slightly fizzy. The second theory refers to the crackling texture of grapes, which are plump and crunchy, creating crackling in the mouth when eaten.
THE WINEMAKING
The harvest is very late, with the grapes drying on the vine; the harvest is manual, and the bunches are carefully selected. Once in the cellar, we proceed with a delicate destemming, followed by maceration for 6-8 days to extract the best colouring, tannic and aromatic parts from the skins. Once fermentation ends, the wine matures in stainless steel tanks for eight months. Subsequently, after blending and bottling, the wine rests in the cellar for a few months before being introduced onto the market.
THE TASTING
The wine has an intense red color tinged with purple. The aroma is pleasant fruity notes of berries, wild blackberry, raspberry, and blueberry are perceived. This wine is well structured, full-bodied and enveloping in the mouth, with refined tannins. Persistence is equally palpable.
FOOD PAIRINGS
It goes well with red meat, mature cheeses, and game. Try it with the typical dishes of Friulian cuisine.
