THE WINE
The Schioppettino from the Moschioni winery is produced with 100% Schioppettino grapes grown between Cividale and Prepotto in Friuli Venezia Giulia. Moschioni is a certified organic winery with a particularity; in fact, it has decided to produce only red wines in a land famous in the world for the quality of its white wines
THE WINEMAKING
In September, the grapes are harvested by hand and placed on a single layer in 4 kg crates and 20 kg plateaux, which remain stationary in a shed at room temperature for a few days. Once in the cellar, the grapes are softly pressed; natural fermentation follows. The wine rests from October to April in steel; it is then decanted into first and second passage barriques, where it rests for 12 months. The wine is then transferred to 2000/3000-litre wooden barrels, where it ages for a period ranging from 2 to 4 years, depending on the vintage. It follows the bottling and a further year of ageing in the cellar before being placed on the market.
THE TASTING
Intense ruby red with violet reflections. The aroma is fresh with hints of red fruits such as cherry in spirit and blackberries, followed by spicy notes of black pepper and cloves, which give way to nuances of cocoa and coffee beans. Warm and balanced on the palate with silky and well-smoothed tannins and a pleasant freshness. Persistent.
FOOD PAIRINGS
It goes well with red meat and aged cheeses. A must try with braised meat
