THE WINE
The Schioppettino di Cialla from the Ronchi di Cialla winery is produced with 100% Schioppettino grapes that grow in the Cialla Valley in the municipality of Prepotto. Very suitable area for the cultivation of grapes.
THE WINEMAKING
After the manual harvest which takes place in the second half of October, the selected grapes are wine made with the only use of indigenous yeasts, on the skins for about 4 weeks. The wine ages for about 14 – 18 months in French oak barriques. After bottling, it rests for a further 30 – 36 months in the bottle.
THE TASTING
Intense ruby red. The aroma is elegant with pleasant hints of small red fruits such as blackberry and currant, that alternate with notes of white pepper; on the finish there is space for balsamic and undergrowth hints. Sapid and full bodied on the palate. The tannin is fragrant and ripe with a refined and almost silky balance. The persistence is also excellent.
FOOD PAIRINGS
It goes well with white and red meats but also with feathered game and medium-hard cheeses. With aging it is excellent with white truffles
