THE WINE
The Sfursat Carlo Negri of the Nono Negri winery is produced with 100% Nebbiolo grapes grown on the slopes of the Rhaetian Alps, along the right bank of the Adda, between 300 and 550 meters above sea level.
Sfursat is a fabulous product generated from the natural drying of the grapes, which is why it is called “Forzato” (it can be translated with forced). A wine particularly robust and alcoholic, produced only in favorable years in limited quantities.
THE WINEMAKING
The harvest is strictly manual and started at the end of September, the harvested grapes are placed in boxes of 4.5 kg of maximum weight where that remain to dry naturally until they loose the 30% of their weight. At the beginning of January they are wine made at a controlled temperature, with a maceration that lasts from 15 to 20 days. The wine then ages for about 2 years; one year in wood and the other in bottle.
THE TASTING
Medium intensity ruby red. The aroma is intense and complex with notes of overripe red fruit alternating with spicy hints of pepper and cinnamon. Dry on the palate, with notes of ripe fruit and a very present and austere tannin. A full bodied and persistent wine, with a pleasant aftertaste of cloves and licorice.
FOOD PAIRINGS
Great with red meat, game and hard cheeses. Must try with the cheese Bitto which si produced locally.
