THE WINE
The Soave Classico Motensei of the Le Battistelle winery is produced with 100% Soave grapes grown in the vineyards owned by the winery, located on steep terraces where the soil has a basaltic-tufa structure and is rich in micro-elements.
THE WINEMAKING
The grape harvest is strictly manual and takes place in the first days of October. Only the selected grapes are brought to the cellar for winemaking which begins with de-stemming, followed by a soft pressing. The must is then immediately cooled; the fermentation takes place in steel tanks at a controlled temperature and lasts about 20 days. The wine ages in steel tanks on the fine lees for about 6-8 months with constant batonnage.
THE TASTING
Straw yellow. The aroma is elegant with pleasant notes of white flowers that alternate with hints of citrus and aromatic herbs. Fresh and soft on the palate, well structured with an excellent correspondence between aromas and flavor. Good persistence with a pleasant mineral aftertaste gained thanks to the volcanic matrix of the cultivation soil.
FOOD PAIRINGS
It goes well with white meat, fish and soft cheeses but also with vegetables. Must try with eggs and asparagus.
