The Wine
The Sono from the Romaldo Greco winery iis 100% Negroamaro grapes grown in the vineyards owned by the winery. We are in Seclì in the province of Lecce, a flat area (76 meters above sea level) where the soil is generally clayey.

THE WINEMAKING
The harvest, which takes place in mid September, is strictly manual; the selected grapes are collected in small boxes and taken immediately to the cellar for winemaking. After soft pressing, the must macerates on the skins for about 15 days. Temperature-controlled fermentation takes place in steel tanks. The wine then ages for approximately 12 months in steel. After blending and bottling, the wine rests in the cellar for a few more months before being released on the market.
THE TASTING
Deep ruby red; the aroma is intense, with pleasant hints of red fruit that leave room for light spicy notes. Harmonious and elegant on the palate, it is a pleasant and warm wine from the Romaldo Greco winery, where the tannins are present but not aggressive. Persistence is also good.
FOOD PAIRINGS
It goes well with red meat, half-matured cheeses and pasta with meat sauces. Try it with cold cuts.
