THE WINE
The sparkling Ribolla Gialla from the Canus winery comes from Ribolla Gialla grapes grown in the vineyards owned by the winery. We are in the renowned Corno di Rosazzo in Friuli Venezia Giulia. In particular, the vineyards of the Canus winery are on the Ronco di Gramogliano, in a real cru classè, where the soil is rich in Eocene marl and sandstone, which is locally called “ponca”, with clay veins.
THE WINEMAKING
The harvesting of the grapes is strictly manual, and only the selected ones are placed in boxes and taken to the cellar. The grapes are pressed and destemmed and then softly pressed. Follows cooling of the must to 12°C and static decantation for 36 hours. The fermentation occurs in steel at a controlled temperature of 18/20°C. The wine ages for approximately nine months in steel before being moved to an autoclave for the second fermentation, where it remains for about six months. The sparkling wine is then bottled with the final addition of an exclusive liqueur d’expédition obtained from a selection of fine reserve bottles of the winery’s white wines. After bottling, the wine rests in the cellar for a few more months before being released on the market.
THE TASTING
Bright straw yellow with a fine and persistent perlage. The aroma is pleasantly fresh and fruity, with notes of oranges and bergamot that leave room for floral hints of orange blossom. This Ribolla is well balanced on the palate, with a pleasant acid note typical of this grape variety. The correspondence between aromas and flavour is excellent, and the finish is pleasantly long.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with any meal if the menu is based on fish and/or white meats.
