The Wine
The DDD rosé sparkling wine from the Duca di Dole winery is produced with 100% Pinot Noir grapes. The Pinot Noir vines are grown alongside those of the Glera grape used for prosecco. To most people, it might be strange to find Pinot Noir in this area, which is the heart of Prosecco, but the product’s potential is very high, thanks to the climate. This wine is the first rosé sparkling wine created by the winery.
THE WINEMAKING
The grapes are harvested by hand and immediately transported to the cellar on refrigerated vehicles at controlled temperature (8-10 ° C). Once in the cellar the grapes are destemmed and softly pressed; the fermentation takes place at controlled temperature. The wine is then moved to the autoclave (martinotti method) for the second fermentation (making the sparkling). The cellar believes in the purity of the wine and limits the addition of sugars and any intervention that alters the original product.
THE TASTING
Heavy pink with ruby red reflections; the aroma is intense and enveloping with pleasant notes of white flowers, rose, cyclamen and violet that alternate with fruity nuances of cherry, black cherry, wild blackberry, and blueberries with an oriental reference to clove and cinnamon. Very fresh on the palate, full-bodied with very soft tannin. The finish is savoury and persistent and invites you to continue drinking.
FOOD PAIRINGS
Perfect with raw fish but also with cooked fish. A must try with risotto and also with fried fish.
