THE WINE
Applause is the classic method of the Collavini winery. This applause wine comes from 60% Chardonnay grapes and 40% Pinot Noir grown in the vineyards owned by the winery in San Floriano al Collio in the province of Udine.
THE WINEMAKING
The harvest is strictly manual; The grapes are selected directly in the vineyard and harvested in boxes at first light before the sun warms the pulp. Once in the cellar, the winemaking starts with a very soft pressing, which allows only the most flower to be extracted; most remains in natural decantation and complete absence of oxygen for a whole night.
The wine then ferments partly in steel and partly in oak barriques at a temperature that never exceeds 14°C. The wine matures on the lees until the following spring.
At this point, the wine is moved to the bottle for refinement and rests on the yeast for four years.
THE TASTING
Deep and bright straw yellow with a fine and continuous perlage; the aroma is fresh with pleasant fruity notes of golden apple and pear alternated with hints of toasted hazelnuts, finishing with scents of warm bread crust. This wine is harmonious and well-balanced on the palate; it is pleasantly fresh with a nice acidic streak inviting you to drink. The correspondence between the aromas and the flavour is also perfect, with a long and persistent finish.

Perfect for an aperitif, it goes well with cooked and raw fish.
THE WINERY
The history of Collavini begins in Rivignano (Friuli Venezia Giulia), in 1896 with Eugenio, the founder, who was the wine supplier of the noble families of Udine and of the shops. The winery management passes from Eugenio to his son Giovanni, who has to drive the company through two wars but, at the end of which, thanks to the rapid acceleration of the commerce, succeeds in establishing the success of the winery thanks to the quality of its wines… go to the winery page
