THE WINE
The Brut Cuvée sparkling wine from the Dorigo winery is a blend of 50% Chardonnay and 50% Pinot Noir. It is one of the winery’s flagship wines and has been produced for over 30 years with results of the highest level.
THE WINEMAKING
The grapes that make up this wine are harvested and wine made separately. After an extremely soft pressing, the must ferments in second-passage barriques. The wines are then aged for 8 months in wood before the cuvée is assembled and bottled with the yeasta. After 30 months on the lees; the degorgement takes place a few months before the bottles are placed on the market. The “liqueur de tirage” used by the winery is a little secret, which has lasted for more than 30 years.
THE TASTING
Straw yellow with a very fine and persistent perlage. The aroma is enveloping, with pleasant hints of exotic fruit such as pineapple that give way to notes of bread crust, closing with toasted nuances and mineral hints. Soft and fresh on the palate, with a good correspondence between the aromas and the taste. The persistence is also excellent.

Excellent as an aperitif, perfect with white meat but also with fish and shellfish.
