THE WINE

The Spumante pas dosé 89/90 from the La Piotta winery is part of the 89/90 line, the third-generation wines that look to the future; this sparkling wine is produced with Pinot Noir grapes; according to the winery, this vine is the most suitable to express the typicality of the territory. We are in Montaldo Pavese, in the heart of Oltrepò Pavese in the province of Pavia.

The Padroggi family founded the winery in 1985 and has continued its viticulture philosophy. Since 2005, all the wines have been certified organic.

THE WINEMAKING

The harvest is strictly manual, the grapes come from the oldest vineyards of the winery, about fifty years old. The winemaking begins with a soft pressing. The must ferments in steel tanks at a controlled temperature. The winery adds a small percentage of reserve wines from previous harvests to the current vintage in order to add a unique character to this sparkling wine.

The spring following the harvest, the wine is bottled with the addition of selected yeasts for the second fermentation and is left to age for at least sixty months. After disgorging, a special liqueur d’exception is added that is different from all the other sparkling wines of the winery. Once the bottling phase is completed, the sparkling wine rests for another six months in the cellar before being released on the market.

THE TASTING

Straw yellow with a fine and persistent perlage. The aroma is elegant with pleasant hints of dried fruit that leave room for scents of bread crust to close with puffs of vanilla. Fresh and harmonious on the palate, this sparkling pas dosé wine is very well structured with a perfect correspondence between aromas and flavour. It is an elegant sparkling wine with a long and persistent finish.

FOOD PAIRINGS

The sparkling wine pas dosé 89/90 is excellent for your aperitif and pairs well with fish and white meats. Must try with sea bass.
