THE WINE
The sparkling wine brut Mille Bolle D’oro from the La Piotta winery is part of the line of sparkling wines produced with Pinot Noir grapes; according to the winery, this vine is the most suitable to express the typicality of the territory. We are in Montaldo Pavese, in the heart of Oltrepò Pavese in the province of Pavia.
The Padroggi family founded the winery in 1985 and has continued its viticulture philosophy. Since 2005, all the wines have been certified organic.
THE WINEMAKING
The harvest takes place in the last ten days of August, and only the selected ones are taken to the cellar for winemaking, beginning with a soft pressing. The must ferments in steel tanks at a controlled temperature; in the spring after the harvest, the wine is moved to the autoclave for the second fermentation and remains there for two to four months. After bottling, the wine rests for a few more months in the cellar before being released onto the market.
THE TASTING
Pale straw yellow with a fine and persistent perlage. The aroma is fine with pleasant hints of fresh yellow-fleshed fruit that leave room for floral hints of broom, closing with puffs of thyme. Fresh and harmonious on the palate, very well balanced with a good correspondence between aromas and flavour; good persistence.
FOOD PAIRINGS
The sparkling wine brut Mille Bolle D’oro is excellent for your aperitif and pairs well with fish and white meats. Try it with seafood pasta.
